2 center cut, boneless, pork chops, fat trimmed, (1 lb. total weight)
¼ cup soy sauce
¼ cup pineapple juice
2 tablespoons sake
1 tablespoon mirin
2 tablespoons honey
¼ teaspoon ground ginger
2 cloves garlic, smashed but kept whole
1 red bell pepper, cut into 12 (2”pieces)
2 green onions, cut into 12 (2”pieces)
12 medium sized fresh shiitake mushrooms, stems removed
4 metal or wooden skewers
