If I had to choose only one flavor of margaritas for the rest of my life, it would definitely be mango margaritas! I’ve found that the alphonso type of mango is the sweetest. I buy them in the summer from Costco, and let them sit on my counter until they are as ripe as they can possible get. Then, I peel and seed them, cut them up, and then put the chopped mangoes in freezer bags and freeze them. Mangoes freeze really well.
Ingredients
8 ounces tequila
2 ounces Grand Marnier
1 ¼ cups fresh mango, chopped
1 ½ cups good quality Margarita mix, non-alcoholic
Directions
Fill a blender ¾ of the way up with ice. Add the remainder of the ingredients and blend for 30 seconds. Line the rim of a margarita glass with salt. Serve with a slice of lime or orange.
Makes 4 margaritas
