I’m always thinking of new ways to have a margarita. Fruit infused with alcohol, is a perfect summertime treat. I added a jalapeno for a little punch. Make these watermelon pops a few hours before your guests arrive and serve them on a platter. This is a good way to get the party started!
Makes 12 pops
1 small seedless ripe watermelon
1 cup store-bought sweetened margarita mix, no alcohol
¾ cup good quality Blanco tequila
2 tablespoons orange flavored liqueur
1 lime zested
1 jalapeno, seeds removed, halved lengthways
10 small popsicle sticks or small skewers
Margarita salt to garnish
Lime wedges to garnish
Using a 2 ½ inch round cutter, cut 12 (1 ½ inch) thick circles out of the watermelon. Put in a large re-sealable plastic bag.
In a small bowl, mix the margarita mix, tequila, orange flavored liqueur, lime zest and jalapeno. Pout the mix over the watermelon circles in the bag.
Refrigerate for 2 hours, turning ocasionally. Remove the circles from the bag and reserve the margarita mix to make a watermelon margarita later. Discard the jalapeno pieces. Put skewers in halfway through the watermelon circles. Put on a platter and lightly sprinkle margarita or kosher salt on top and additional lime zest. Garnish with lime wedges. Recipe may be doubled.
