Football season is coming. I think there’s no better way to make guacamole than with a guacamole with pomegranate garnish.
1 large Haas avocado, ripe, cut into small cubes
1 tablespoon red onion, chopped small
1 small jalapeno, minced fine
½ clove garlic, minced fine
1 tablespoon cilantro, minced
1 small roma tomato, center and seeds scooped out and chopped small
Salt and Pepper to taste
1 tablespoon pomegranate seeds to garnish
Juice of ½ small lime
Add all the ingredients except the pomegranate seeds in a medium size bowl and toss together trying not to break up the avocado. Make sure and season with kosher salt and cracked black pepper.
Garnish with pomegranate seeds and serve with low fat corn tortilla chips. Double the recipe for more guests.
