Summertime is here and there’s nothing better than “Caprese” anything! I created these sticks for something light to serve guests by the pool. They are nice and light but refreshing and tasty too! Look for the small seedless watermelon.
Makes 12 sticks (Serves 6)
1 small seedless watermelon
1 small cantaloupe
2 fresh balls of low fat Mozzarella cheese, sliced into 12 (1/2 inch) round slices
1 teaspoon garlic salt
Cracked black pepper
12 basil leaves
Balsamic vinegar glaze, store-bought
12 long toothpicks or decorative sticks
Directions
Using a 1 ¼ inch round cookie cutter, cut 12 circles of watermelon, 12 circles of melon, and 12 circles of mozzarella cheese. Lightly sprinkle the garlic salt and cracked black pepper on top of the mozzarella rounds.
To make the sticks, stack the watermelon, mozzarella, melon, 1 piece of basil on top of each other. Secure with a long toothpick. Put on a platter and drizzle with the balsamic glaze.
