I’m always thinking about how I can create new side dishes that aren’t a lot of work. This is one of my mashed potatoes recipes that I’ve done that everyone wants me to make all the time. Everything I needed for this recipe was already in my pantry.
Serves 6
2 slices thick cut bacon
1 tablespoon all-purpose flour
2 cups whole milk, heated
1 1/2 cups shredded sharp cheddar cheese
1/4 teaspoon kosher salt
1/4 teaspoon cracked black pepper
3 baking potatoes, peeled and cut into 1 inch pieces
1 carrot, peeled and cut into 1 inch pieces
2 cups broccolini cut into 1 inch pieces
¼ cup half and half, warm
5 tablespoons unsalted butter, melted
1 ½ teaspoons kosher salt
¼ teaspoon cracked black pepper
Directions
Heat a sauce pan to medium heat and add the bacon and cook till crisp. Remove the bacon and crumble into little pieces for garnish, set aside. Remove all but 1 tablespoon bacon drippings from the pan. Whisk in the flour and cook for 1 minute. Slowly whisk in the warm milk, and cook, whisking constantly until thickened, about 4 to 5 minutes. Remove the mixture from the heat and whisk in the cheddar cheese until combined. Season with salt and pepper and set aside, but keep warm.
Heat a large pot of water to boil. Add the potatoes and carrots and cook for about 4 minutes. Add the broccolini and cook until all the vegetables are tender. Drain the vegetables and put in a large mixing bowl. With a potato masher, mash the vegetables and add in the butter, half and half, kosher salt and pepper and mix well. Garnish with the crumbled pieces of bacon.
